Visit to Sweden and Denmark!

I have been spending 17 precious days in Sweden and also a trip to Denmark, visiting children and grandchildren. It was so great to see them all! I wish I could pack them all into my suitcase and take them with me back home.

I didn't have my camera with me and I didn't really have time to take a lot of pictures, because we were so busy just hanging out. We had an awesome time together!

The Little Mermaid is a bronze statue by Edvard Eriksen, it's only 1.25 meter tall. The sculpture is displayed on a rock by the waterside at the Langelinie promenade in Copenhagen, Denmark. 




Then I was told by Anita (my son's awesome danish girlfriend and our tour guide) that Denmark also have "The big mermaid statue", although less known to the public.
My oldest daughter Tres just couldn't resist the challenge. :)

It was a bit cold and windy but no rain! Hurray!!

Me and Emelie. Everytime I get the camera out they all start to make faces, it never fails. I'm just trying to look normal, which isn't all that easy.

We also made a trip into the Freetown Christiania, which is a weird and controversial place. You are not allowed to take any pictures there. So the only picture I have from that experience is this one inside the big skate rink they built.

 But mostly I spent my days in Sweden with the whole gang of grandchildren. Lovely!

Tosca Mini-Tarts

I made this Tosca Mini-Tarts the other day and they are GOOD!! And so easy to do. I usually make my own almond paste because it's so easy to make yourself and it's quite expensive to buy.





And here is the recipe for the Mini-Tarts. I hope you can see it otherwise just tell me and I'll scan it. Now I'm the lazy woman and just took a picture of it. 




And here is the recipe for almond paste too. All you need is a food processor and you are good to go.


Almond paste
Makes about 13 oz almond paste.

1  1/2 cups sliced almonds (it's important that the almonds are without the peel)
1  1/2 cups sifted powered sugar
1 egg white
1 tsp almond extract
1/8 tsp salt

Grind the almonds in a food processor. Add sugar, egg white, almond extract and salt. Work to a stiff paste. Store in refrigerator or freeze tightly wrapped in saran or disposable plastic bag.

Garden that needs TLC...

Believe it or not but this is actually a gazebo and not just one big bush. I'm telling myself I have to get out there and start trimming it, but it is always something that gets in the way. Today it's way too hot to be outside for example... 



And then I need to tend to the pond, it's so sadly overgrown. Either we will buy a weed wacker or we will just be lazy and get the lawn mower guy to fix it. I kind of prefer to do it myself, so it will get done properly. Or at least my way. 



And I also would like to get this horse shelter cleaned up a bit. We don't have horses but I still would like to get it fixed up.
